APPLE PIES
Ingredients 2 tablespoons butter 4 McIntosh apples, peeled, cored, and sliced, or 1 can apple pie ... Filling 1/2 cup sugar 1/2 teaspoon ground cinnamon 1 teaspoon lemon juice 1 (8-piece) container refrigerated flaky biscuit dough 2 tablespoons water Powdered sugar Directions Filling: Add the butter to a large saute pan and melt. Add the apples, sugar, cinnamon and lemon juice. Cook over medium heat until the apples are soft, about 15 minutes. Remove from the heat and cool. When the filling is cool, roll the biscuits out on a lightly floured surface so that each biscuit forms a 7 to 8-inch circle. Place 2 to 3 tablespoons of the filling on each biscuit circle. Brush the edges of the circle with water. Fold the circle over the filling to make a half-moon shape. Seal by pressing the edges with the tines of a fork. Preheat deep-fryer with oil to 350 degrees F. Carefully add the pies to the oil, 1 at a time, and fry until golden brown, turning the pies as necessary for even browning, about 5 to 8 minutes. Drain on paper towels. Sprinkle with powdered sugar immediately. With many thanks to Appalachian Livin' for this recipe and photo. |
Mountain Dew Apple Dumplings

1 (21 ounce) can apple pie filling 6 (8 inch) flour tortillas 1 teaspoon ground cinnamon ... 1/2 cup butter 1/2 cup white sugar 1/2 cup brown sugar 1/2 cup water Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in prepared dish. In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let stand 45 minutes. Bake in preheated oven 20 minutes, or until golden. |

Ingredients •2 packages (3.4 ounces each) instant vanilla pudding mix •2-3/4 cups cold 2% milk... •1 teaspoon coconut extract •1 carton (8 ounces) frozen whipped topping, thawed •1/2 cup flaked coconut •1 graham cracker crust (9 inches) •Toasted coconut Directions •In a large bowl, whisk the pudding mixes, milk and extract for 2 minutes. Fold in whipped topping and coconut. • Pour into the crust. Sprinkle with toasted coconut. Chill until serving. Yield: 6-8 servings. Nutritional Facts 1 serving (1 piece) equals 312 calories, 15 g fat (9 g saturated fat), 11 mg cholesterol, 348 mg sodium, 38 g carbohydrate, 1 g fiber, 4 g protein. NOTE! INGREDIENTS: For the Crust: 2 cups graham cracker crumbs ½ cup unsalted butter, melted For the Cream Cheese Layer: 12 ounces cream cheese, at room temperature ¼ cup granulated sugar 8 ounces COOL WHIP Whipped Topping For the Fruit & Toppings: 3 to 4 bananas, sliced 1 (20-ounce) can crushed pineapple, drained well 16 ounces strawberries, hulled, and sliced 8 ounces COOL WHIP Whipped Topping ½ cup walnuts, chopped Chocolate syrup Maraschino cherries DIRECTIONS: 1. Grease a 9x13-inch baking dish; set aside. 2. In a medium bowl, combine the graham cracker crumbs and melted butter, stirring until all of the crumbs are evenly moistened. Dump the crumbs into the prepared pan and press into an even layer. Refrigerate while you prepare the next layer. 3. In a medium bowl, mix together the cream cheese and sugar on medium speed until light and fluffy, about 3 minutes. Using a rubber spatula, fold in the COOL WHIP until thoroughly combined. Spread the cream cheese mixture on top of the graham cracker crust. 4. Arrange the banana slices in a single layer on top of the cream cheese filling, top with an even layer of the crushed pineapple, and then an even layer of the sliced strawberries. 5. Cover with the COOL WHIP, smoothing the top. Sprinkle with the chopped walnuts, then drizzle with chocolate syrup and top with maraschino cherries. Refrigerate for at least 4 hours, or overnight. |
