Rancho Chicken Fried Steak 4 (1/2 pound) beef cube steaks 2 cups all-purpose flour 2 teaspoons baking powder ... 1 teaspoon baking soda 1 teaspoon black pepper 3/4 teaspoon salt 1½ cups buttermilk 1 egg 1 Tablespoon hot pepper sauce (e.g., Tabasco™) 2 cloves garlic, minced 3 cups vegetable shortening for deep frying 1/4 cup all-purpose flour 4 cups milk kosher salt and ground black pepper to taste 1. Pound steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, Tabasco Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour. 2. Heat shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Fry the steaks until evenly golden brown, 3 to 5 minutes per side. Place fried steaks on a plate with paper towels to drain. Drain the fat from the skillet, reserving 1/4 cup of the liquid and as much of the solid remnants as possible 3. Return skillet to medium-low heat with the reserved oil. Whisk the remaining flour into the oil. Scrape the bottom of the pan with a spatula to release solids into the gravy. Stir in the milk, raise the heat to medium, and bring the gravy to a simmer, cook until thick, 6 to 7 minutes. Season with kosher salt and pepper. Spoon the gravy over the steaks to serve. Picadillo

and ground cumin. Stir in canned crushed tomatoes, raisins, capers and green
olives. Simmer until thickened. Serve over rice.

Mayonnaise 2 teaspoons dried onion flakes 1 cup sliced fresh mushroom (I omitted because my family does not like mushrooms) 2 cup shredded Colby/Jack cheese First, Sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes. While the chicken is in the refrigerator, cook bacon in a large skillet until crisp. Remove bacon and set aside. ***Do not discard grease.*** Saute chicken in the bacon grease for 3 to 5 minutes per side, or until browned. Place chicken in a 9" × 13" casserole dish or pan. To make the Honey Mustard: In a small bowl, mix the mustard, honey, mayonnaise and dried onion flakes. Spread some of the Honey Mustard over each piece of chicken, then layer with mushrooms, crumbled bacon, and shredded cheese. Bake in a 350° oven for 30 minutes, or until cheese is melted and chicken is done. The recipe calls for 2 cups but I do use a little more, 2 cups ne...ver seems to cover the roast!! 3 Envelope Roast Ingredients: 3 pound beef roast such as chuck roast 1 envelope of dry Italian salad dressing mix 1 envelope of dry ranch salad dressing mix 1 envelope of dry brown gravy mix 2 cups water Instructions : Put the water in a measuring cup that is larger then the amount of water you are using. Now add and mix all three envelopes of dry salad dressings to the water. Mix until blended completely. Brown the roast (if desired). Add the meat to your cooker. Pour the water, salad dressing mixture over the roast. In the slow cooker cook it on high for about 4 hours on low about 8 hours. |

1 ½ lbs ground beef 1 cup chopped onion ½ cup cooked rice ... ¼ tsp black pepper 1 egg 1 ¾ cups sliced fresh mushrooms 2 Tbsp Worcestershire sauce ½ tsp salt 3 cups beef broth 3 Tbsp water 2 Tbsp cornstarch Combine ground beef, onions, rice, black pepper and egg; divide into six equal portions. Shape each into a 1 inch thick patty. Coat a skillet with cooking oil and cook patties for 5 minutes on each side. Remove from skillet; keep warm. Add mushrooms to the skillet and cook for three minutes. Add Worcestershire sauce, salt and beef broth; cook for another ten minutes. Return patties to the skillet, cover and simmer for 15 minutes. Remove the patties to a platter; keep warm. Combine water and cornstarch; add to broth mixture, stirring well. Bring to a boil then cook ONE minute more. Serve over patties. Brown Sugar Meatloaf
1/2 cup brown sugar, packed ... 1/2 cup ketchup 1 1/2 lbs lean ground beef 3/4 cup milk 2 eggs 1 1/2 teaspoons salt 1/4 teaspoon ground black pepper 1 small onion, chopped 1/4 teaspoon ground ginger 3/4 cup saltine cracker crumbs, finely crushed or use bread crumbs finely processed. Preheat oven to 350 degrees. Lightly grease a 5 x 9 inch loaf pan. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup. Bake in preheated oven for 1 hour or until juices are clear. sheet. Scatter cubes of mozzarella cheese, cooked ground beef, caramelized onions and crumbled blue cheese evenly across the dough, leaving a 1 1/2-inch border. Gently press the toppings into the dough and, beginning at a long end, loosely roll up the dough, pinching the edges together to seal. Bake in a 425° oven until puffed and golden brown, about 20 minutes. Herbed Beef Pinwheels Cook ground beef with chopped garlic and herbs such as thyme, parsley and
oregano. Pulse in a food processor until finely chopped. Spread mustard on a sheet of puff pastry, then sprinkle the ground beef mixture on top, followed by a layer of grated swiss cheese. The secrets to this ring’s success are crushed tortilla chips and green chillies, which lend it an authentic enchilada flavor. Olé ! ING...REDIENTS 2 cups coarsley chopped cooked chicken (abour 12 oz) 1/4 cup chopped pitted green olives 1 cup (4 oz) shredded cheddar and Monterey Jack cheese blend 1 can (4 oz) chopped green chilies, undrained 1/2 cup mayonnaise 1 Tbl Pantry Southwestern Seasoning Mix 2 plum tomatoes 1 lime 2/3 cup finely crshed corn tortilla chips, divided 2 pkgs (8 oz) refrigerated crescent rolls 1 cup salsa 1 cup sour cream DIRECTIONS 1. Preheat oven to 375°. Chop chicken and olives using Food Chopper; place in Classic Batter Bowl. Add cheese, green chilies, mayonnaise and seasoning mix. 2. Seed and chop 1 tomato. Slice lime in half. Using juicer, juice one half of the lime to measure 1 teasp juice. Reserve remaining lime for garnish. Add chopped tomator and lime juice to chicken mixture. 3. Reserve 2 Tbls crushed chips; add remaining chips to chicken mixture and mix well. 4. Sprinkle reserved crushed chips over flat side of Large Grooved Cutting Board. Unroll crescent dough. Place dough, sticky side down, onto crushed chips; press down lightly so chips adhere to dough. Separate dough into triangles. Arrange triangles, chip side down, in a circle on Classic Round Stone with wide ends overlapping in the center and points toward outside. (There should be a 5-inch diameter opening in center.) Using Medium Scoop, scopp chicken mixture evenly onto widest end of each triangle. Bring points of triangles up over filling and tuck under wide ends of dough at center of ring. (Filling will not be completely covered.) Bake 20-25 mins or until golden brown. 5. For garnish, cut remaining tomato into 8 wedges. Cut remaining half of lime into 4 slices, cut in half. Arrange between openings of ring. Cut using Slice N Serve. Serve with salsa and sour cream. |
